Shakshuka with Feta

Method

Saute onion and pepper in olive oil until soft, add garlic and cook 1 minute.

Add spices and stir, then pour in crushed tomatoes; simmer 10 minutes until thickened.

Make wells in the sauce and crack in eggs; cover and cook until whites are just set.

Top with crumbled feta, fresh parsley, and serve straight from the pan with crusty bread.
