Grilled Salmon with Herb Butter
A skin-on Atlantic salmon fillet marinated in lemon and dill, grilled over high heat, and finished with a compound herb butter that melts luxuriously over the fish.

Method

Mix butter with dill, capers, and lemon zest; roll in cling film and refrigerate.

Brush salmon with olive oil, season with salt and pepper, and let stand 10 minutes.

Grill skin-side down on a hot griddle pan for 4 minutes; flip and cook 2 minutes more.

Top immediately with a slice of herb butter and serve with steamed asparagus and lemon.
